The past couple of days have been moving at mixtape pace.

Brewed up a Dark Mexican Lager, kegged a fresh Hazy IPA, transferred the Kölsch and the stout, and somewhere in the middle the grain mill decided it wanted to freestyle. Mill was wired backwards and the rollers were spitting grain right back at us. Not exactly the feature we ordered. Smitty with the electric work and we back in action!

But that's part of the process. Temporary issues, long-term solutions. Every challenge teaches us something and gets us one step closer to having this system dialed in.

We're stacking reps, learning lessons, and getting everything ready for what's next.

Started from the kitchen now we’re here. 🎙️🔥

They say you never forget your first. For Smitty, this Porter isn’t just another batch on the board—it’s the one that started the whole damn fire.

From day one in the kitchen, measuring out grains and dreaming big, to standing in front of the commercial tanks dropping his first professional batch. Same recipe, same passion, just a massive new scale. 📈✨

This is a milestone. The bridge between the hustle of the homebrew days and the rhythm of the commercial cellar. Thick, dark, roasty, and absolutely immaculate. ☕🍫
But don't sleep on us—this is just the intro track. We’re just setting the vibe for a whole catalog of dope beers to come.

Hazy business. 🍊🍍 🍐 🍑 🍈 ☁️

Brewed with Ekuanot, Idaho 7, and Mosaic — bringing waves of citrus, tropical fruit, dank notes, and that smooth haze we’ve been chasing. This one smells like somebody opened a bag of fresh hops over a boom bap instrumental.

Every batch feels like another level unlocked. The system’s getting dialed in, the tanks are talking back a little less, and the beer keeps getting better.
Liquid sunshine straight out the fermenter. Dallas, we got one for the hop heads.

Third brew day felt like a smooth third verse—everything just clicked.

Way more in rhythm than the last run. Mash tried to get a little sticky, but we kept it moving like a clean transition.

Brewed up a Kölsch today—light, crisp, and sounding real polished already. This one’s got replay value.

We dialing it in, one session at a time.
