Just finished transferring 5 gallons of English Pale onto 3 oz of oak chips that have been soaking in a blend of Texas whiskeys, and it smells delicious!. Secondly, I now have half a bottle of whiskey that been double aged!

We don't get a lot of celebrities cruising through our little town so our staff was pretty excited when Will Ferrell visited the brewery and our pub yesterday. After taking a VIP tour he was kind enough to pose with our crew for this photo.

Just started soaking 3 oz of oak chips in two kinds of Texas Whiskeys. I'll add this to the fermenter in about a week to create a mock Whiskey cask flavor. Just like the pros, sort of... well, close enough.

Just started mashing our new recipe for an English Pale. Cool part is, I plan to age it with Bourbon Barrel oak chips. :)

And there it is! The Texas Wit is finally in bottles... now we just need to wait a few weeks. I'm really excited for this one, I think the addition of Texas Grapefruit zest and local honey from Round Rock is going to surprise some people on what a Wit can taste like.
