Moth beans soup to sooth your soul with richness of Jackfruit seed( 'आठळी')
Just squeeze some lemon, add pinch of rock salt and drink it hot.
Monsoon diet . Keep it light and fresh.
Yummy Pumpkin and Methi soup---
Ingredients
Pumpkin chunks - 1 medium cup
Methi leaves (Fenugreek leaves) - 1 small cup
few green peas and corn kernels
Ginger and garlic paste
Or
Ginger and garlic(4 cloves) finely chopped
Black pepper - 2-3
cloves - 1-2
1 seedpod of star anise (chakra ful)
lemon grass for taste.
Little Ghee or clarified butter for seasoning
Salt as per taste.
1. Add little ghee(clarified butter) in a small pressure cooker.
Now add all spices and ginger-garlic paste to it and roast it till it leaves nice aroma.
2. Now add pumpkin chunks, methi(fenugreek) leaves, lemon grass, green peas and corn kernels .Add 2 medium cups of water in it.
3.Pressure cook it for 2 whistles.
4. Now blend it in mixer to smooth paste.
Do not put all green peas, corn and methi leaves in mixer. Let some remain whole in the soup .
While blending keep excess water in the cooker.
5. Now add remaining(excess) water to the paste and bring it to boil .
Serve hot.
This would make really delicious mild sweet flavoured soup.

For seasoning ( fodani)- Oil, mohari/ Mustard seeds(optional) jeera and green chilly

Chopped onions and tomatoes

Grated bottle gourd ( Dhudhi/ lauki)

Chopped onions tomoatoes.
For spicy paste : groundnuts, mirchi, kothimbir, raw mango, lasun, aale ( ginger) , add lil honey and flaxseed oil ( 2 drops ) or coconut, olive as per taste, season and availability.
Pink salt and regular salt
Coat boiled mataki with spicy paste,add salt
Drizzle everything with Lemon juice
Keep salad for 1hr for mataki (moth beans) to get marrinated with the paste.

Ingredients

Finely chopped green chillies
Boiled corn kernels
Boiled chawali - black eyed bean ( very small quantity)

Ingredients:
Chopped palak- 1 large bowl
soaked and peeled Almonds- 5-6
chopped onion- small 1/2
2-3 black pepper, pinch of shahi jeera (caraway seeds), pinch of cardamom powder, Ghee(clarified butter) for seasoning.
1/2 inch ginger
Pinch of salt and turmeric powder.
There are various dressings available for salads; Caesar dressing, Ranch, Vinaigrette to name a few....
