The pepper season may be coming to an end, but the fermentations are still going strong! 3 fermented hot sauces coming straight at ya:
🔥 Death Sauce: Our HOTTEST hot sauce yet, this is pure heat. Homegrown Carolina Reaper, New Mexico Big Jim Chili, Trinidad Scorpion, and Bhut Orange Copenhagen are the peppers used and we did not hold back. This hot sauce hits you upfront with a major kick of heat, carried through with some deep honey flavors from the Serrano Chili Honey Vinegar. Where does the fermentation come into play you ask? Well to thin out hot sauce we normally use vinegar or a little bit of water. Not this one, we used the fermented brine from the Trinidad Scorpion Hot Sauce. Why you ask? Well you can’t call it Death Sauce and start cutting corners…
🔥 Fermented Fuego: As the days got shorter and nights got colder I would catch myself looking out the window looking at the pepper plants, pondering on what to do with them. Then one night it hit me, let’s just ferment EVERYTHING. Carolina Reaper, Peach Carolina Reaper, Lemon Starburst, Trinidad Scorpion, Red Chili Chilaca, Chocolate Habanero, Bhut Orange Copenhagen, and Red Fresno all got thrown in a 4% salt brine to sit for over a month. Once pulled, everything was blended up along with a lot of the brine used for the fermentation and a little bit of sweet onion to help round out the heat. This hot sauce is hot, but not a tongue killer as the fermentation helped dissipate some of that raw pepper heat.
🔥 Trinidad Scorpion: Coming I’m at 1.2 million scoville units, the Trinidad Scorpion Pepper is HOT. That’s like the heat of a jalapeño times 480 or a habanero times 12. To make it hotter, we ferment in the same container of Trinidad Scorpions; garlic, carrots, and sweet onions. Carrots and sweet onions should help with the heat? WRONG! Quite literally everything in this fermentation takes on the heat of the Trinidad Scorpion Pepper. So not only are the peppers hot, EVERYTHING that goes into this hot sauce is hot.
