Garlic & Rosemary Marinated Leg of Lamb
Ingredients
• 1 semi-boneless leg of lamb
• 16 cloves garlic, divided
• Salt and black pepper, to taste
• 2 bunches fresh rosemary
• Fresh lemons (for squeezing during cooking)
Marinade
• 1 cup lemon juice
• 1 cup Nostimo olive oil
• 4 tablespoons Greek oregano
• 8 cloves garlic

Instructions
1. Prepare the Lamb
• Using a sharp knife, score the fat side of the lamb in a crisscross pattern.
• Insert 8 garlic cloves evenly into the cuts.
• Generously season the entire lamb with salt and black pepper.
2. Make the Marinade
• In a blender, combine:
• Lemon juice
• Olive oil
• Greek oregano
• Remaining 8 cloves of garlic
• Blend until smooth.
3. Marinate Overnight
• Lay the lamb on a bed of fresh rosemary in a large dish or roasting pan.
• Pour the marinade evenly over the lamb.
• Cover and refrigerate overnight.
4. Roast
• Preheat oven to 350°F (175°C).
• Place the lamb on a rack in a roasting pan.
• Roast for approximately 1.5 hours, or until internal temperature reaches 130°F for medium-rare.
• During cooking, periodically squeeze fresh lemon juice over the lamb for added brightness.
5. Rest and Serve
• Remove lamb from oven and let it rest for 30 minutes before slicing.
• Slice and serve, spooning pan juices over the top if desired.
