Here at Spring Thaw Maple we have been told that our syrup is the best tasting maple syrup people have ever had. We like to think so too, here are a few reasons we believe lead to this. A lot of the more 'modern day' and larger operations now use oil burning evaporators for efficiency and control. We on the other hand use a traditional wood fired evaporator, which in our opinion gives the syrup just a tiny hint of smoky flavor that perfectly compliments its sweetness. Another thing most large syrup makers now use is a reverse osmosis machine. We don't like to use the word cheating, but this process for removing a lot of the excess water is definitely cutting corners in the name of production. We don't know for sure, but the long, slow cooking process of evaporating each and every drop of water until we reach syrup just seems to make a tastier final result. Last, but not least we bottle in glass. The lifespan of syrup doubles from 6 months when bottled in plastic, to a full year (and beyond) when bottled in glass. Also since syrup must be bottled hot, there is no chance of leaching chemicals from container to the syrup in glass like there could be in plastic.
