I get quite a few questions about what the second little w***h is for also how do I bring quarters up into the trailer. Well here you go, I split the beef at the eighth vertebrae after I split it in half, bringing the quarters up one by one

Ok let’s talk about yield!!
This was an old heifer 17 years old to be exact. Typically at about 6-7 years old, their bones start to harden up as seen on the spine. After about 9 to 10 years, they start to lose weight.
This cow still had enough weight and healthy enough to be butchered for burger, bones are more pronounced and are denser instead of 60% yield, old cows like this will be closer to 45 to 50%. Customers on this beef want back the fat and the bones so they’re still gonna get fairly good yield, considering the circumstances.

We finally got our rail system installed still got a few quirks, but nothing a little bit of welding and adjusting can’t fix, no more breaking my back carrying quarters in lol. Bringing in great quality beef from Whiskey River ranch today.
