Here is a good topic, botulism. There are many people who will try to disuade you from Home Canning because of this. But seriously folks, look up the facts!!!! If you are properly canning your goods, and they are sealing when canning, the chance of that is extremely rare. Here are two examples, I will separate with ****. Truth be told, you are MUCH more likely to get sick from STORE BOUGHT goods, as noted below. Top is Home Canned, below the **** is Store bought. I'll stick with Home Canned, thank you.

While rare, home-canned goods can cause deadly botulism, with averages around 5-6 cases and fewer than one death per year from home canning, though figures vary by year, with some years having more cases (e.g., 11 in 2009) and others none, highlighting the danger of improper canning methods for low-acid foods like vegetables, meats, and beans.
Key Statistics & Trends:
Low Frequency, High Risk: Botulism from home canning is uncommon but serious, as the toxin is heat-resistant and grows without air, notes the USDA National Agricultural Library and G. Damerow.
Average Cases: Over a 32-year period (1990-2021), there were about 190 cases from home canning, averaging under 6 per year, according to G. Damerow.
Average Deaths: The overall foodborne botulism death rate is low (under 5%), meaning home-canning cases result in fewer than one death every three years on average.
Specific Years:

For my first baked loaf, I saw someone's post with a Blueberry Lemon Cream Cheese loaf, but I'm allergic to blueberries. I had freeze dried strawberries, so I powdered them, mostly and used that. Not bad for the first baked loaf. I mixed a thick glaze with the leftover cream cheese, a splash of milk , powdered sugar and some strawberry powder. It's tasty!

Lemon Meringue Pie. Just put it in the fridge to cool! Requested with normal meringue this time, not my Mile High Meringue. LMAO

You can use a regular pastry crust, or Graham Cracker, which is what I made in a 9" pan.

For the Pie:
1 cup granulated sugar
2 Tablespoons all-purpose flour
3 Tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
1/2 cup lemon juice
1 Tablespoon lemon zest (about 1 large lemon)
2 Tablespoons unsalted butter
4 large egg yolks, separated

For the Meringue:
3-4 egg whites (room temp)
1/4 teaspoon cream of tartar
1/4 cup sugar
Dash of salt
1 teaspoon Vanilla

Take your 4 eggs and separate the egg yolks from the egg whites in separate bowls and set aside. (Be sure there is NO yolk in the whites! Preheat oven to 375.

In a medium saucepan, whisk together sugar, flour, cornstarch, and salt. Stir in water, lemon juice, and lemon zest (I dice mine finely). Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Remove from the heat and stir in the butter.
Beat the egg yolks with a fork. Add a spoonful of the hot mixture from the pan into the egg yolk and whisk together to SLOWLY temper the eggs (gradually warm them). Repeat, with a few more spoonfuls. Whisk the egg yolk mixture back into the remaining sugar mixture in the pan. Bring to a gentle boil and continue to cook while stirring constantly, until thick. Remove from heat. Pour hot lemon filling into baked pie shell.

With your mixer, beat the egg whites, cream of tartar, and a dash of salt (optional) until it is starting to form soft peaks. Add the vanilla, continuing to mix. Slowly add in the sugar and continue until it is forming stiff peaks. Top the lemon in the pie with the meringue. Be sure to take it all the way to the edge of the pan, locking it in so it won't pull away when baking, or weep later. You can use the spatula to create peaks on top, or make it smooth, whichever you prefer.

Bake the pie on center rack of the oven for 10 minutes. Place on wire rack to help air circulate and cool. When cool, put in fridge till ready to serve.

IF it lasts that long, it will keep in the fridge 2-3 days.
