Enjoy this Apple Tiger Nuts Muffins, a treat that
perfectly aligns with the Autoimmune Protocol (AIP) diet. These muffins blend
the natural sweetness of apples with the nutty flavor of tiger nut flour, offering a
nutritious start to your day or a satisfying snack.
Ingredients
250g apple sauce
150g chopped apples
150g Paleo Tiger’s Tiger Nut Flour (Extra Fine)
50g tapioca starch or arrowroot
4 tbsp AIP-compliant oil (such as coconut or avocado oil)
1 tsp vanilla bean
1 tsp cinnamon powder
1 tsp cream of tartar
A generous pinch of salt
Preheat the Oven:
Start by preheating your oven to 375°F (190°C). Line a muffin tin with paper liners or
lightly grease the cups with AIP-compliant oil to prevent sticking.
Mix Dry Ingredients:
In a large mixing bowl, whisk together the tiger nut flour, tapioca starch (or
arrowroot), cinnamon powder, cream of tartar, and salt. Ensure the mixture is well
combined.
Combine Wet Ingredients:
In another bowl, mix the apple sauce, chopped apples, AIP-compliant oil, and vanilla
extract. Stir until everything is evenly incorporated.
Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Be
careful not to overmix to ensure your muffins are fluffy.
Fill Muffin Cups:
Spoon the batter into the prepared muffin cups, filling each about 3/4 full. This allows
the muffins room to rise without spilling over.
Bake:
Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a
toothpick inserted into the center of a muffin comes out clean.
Cool:
Allow the muffins to cool in the pan for a few minutes before transferring them to a
wire rack to cool completely. This step helps the muffins set and makes them easier to remove from the pan.
