Chef J's preparation of the Paniolo Ribeye at the legendary Mai-Kai Restaurant — a 30-day Mai-Kai private label rum dry-aged ribeye, finished with a dehydrated pineapple rub, Chinese broccoli, fingerling potatoes, shish*tos, pineapple chimichurri, pickled onions, and Maldon salt.
