Our Angus cattle are grass-fed, raised on managed pastures and are finished with supplemented grain. Natural with no antibiotics or synthetic growth supplements. Humanely treated with care, compassion and respect. Rotationally grazed perennial pastures are good for our soil, water and climate. Grass fed beef is leaner and higher in beneficial fatty acids than feedlot beef. Some grain at finishing improves flavor, tenderness and reduces our carbon footprint. Our customers like the taste and tenderness very well. We are a licensed retailer with Public Health - Dane County.
Pricing is based on the animal’s carcass weight at processing = Our beef price + processing fees.
Beef Price: $4.20/lb. of carcass (hanging) weight
Processing: Slaughter charge = $150 whole beef; $75 half beef; $50 quarter beef (split side)
Cutting and wrapping = 90 cents/lb. of carcass weight
ESTIMATED carcass (hanging) weight for whole beef = 690 lbs
FOR EXAMPLE, If you were to take a quarter (split side) beef:
1. Processing charges (The Meat Market, Baraboo, WI):
Slaughter charge: $50.00 (one-quarter “split side”) $50.00
Cutting and wrapping: 173 lbs carcass weight x $.90 $156.00
2. Our charge for beef : $4.20 x 173 lbs carcass weight $727.00
Total ESTIMATE for one-quarter beef: $933.00
Your processed beef would be ready approximately December 26. We will schedule delivery to your door (unless you prefer to pick-up).
The meat yield from the carcass will depend on your custom cutting order. If you get all of the soup bones, short ribs and stew meat you can ROUGHLY ESTIMATE 55% of the carcass weight in meat (95 lbs of meat for a quarter beef ($9.82/lb. beef across steaks, roasts, ground chuck, etc.)). Quarters are “split side” which gives a mix of the front and hind quarters. Therefore, custom cutting orders for a quarter will need to be somewhat matched with another quarter. There are extra charges from the processor if you have them make hamburger patties, summer sausage, dried beef, braun schweiger, etc.
Our processing is done at The Meat Market in Baraboo, WI. The cuts are shrink-wrapped in food grade plastic, which provides good freezer life and allows you to see the meat as you choose it from your freezer. Paper wrapping is also available if preferred. The cuts/packages are all labeled. Their website at http://www.themeatmarket.net/ shows the cuts they offer. We have great confidence in the Meat Market’s professionalism and like their facility.
We can forward a cutting instructions sheet for you to look over. At The Meat Market, they prefer to take your cutting order over the phone. The communication opportunity is a nice touch with them.
