Since I was a small child I have wanted a farm. I can remember being on a field trip in 1st or 2nd grade to a local Dairy Farm. The farmer asked who wanted to try to milk the cow. I raised my hand and said "I DO!" I don't think anyone else in the class wanted to but I did. I was the type of child who wanted every animal out there. I have always been interested in the old ways of doing things. Spin

ning wool, learning about medicinal herbs, hand dipping candles. I self taught myself and read books on farming animals and crops. There is a certain satisfaction of planting a seed in the ground, watching it pop out of the ground a grow and flower and then to bear an edible product, and to be able to have other people enjoy eating a homegrown product. That is my goal...................

Mini eggplant on the stand. Slice them like you would a cucumber, sauté them in olive oil. Then toss them with Parmesan cheese. You could also add tomato sauce if you like. Quick and easy and so yummy.
