Grill's put away. Fine. The best way to cook a frank in October doesn't need one.

Split it lengthwise. Lay it face-down on a hot cast iron griddle and don't touch it.

What you get is more surface area hitting the heat, edges that caramelize instead of just warming, and a flat frank that actually sits in the bun instead of rolling out of it onto the floor.

If your grandmother made this, you already know. If she didn't, you're about to find out what you missed.

Brown a sliced ring in the skillet first. Take it out and leave the fat — that fat is the entire recipe.

Soften a sliced onion in it. Then two cups of drained sauerkraut and a good pinch of caraway. Ten minutes.

Put the bologna back in. Cover it. Fifteen minutes on low while everything gets to know each other.

Boiled potatoes on the side. Mustard on the table.

This has been supper in Lancaster County for about a hundred years, and it hasn't needed updating once.

Two Lancaster County smokehouses, both of them stubborn about doing it right. Of course this was going to happen.

Hippey's is at S. Clyde Weaver.

They've been smoking meats and aging cheese around here since 1920. We've been making ring bologna since 1969. Nobody at either place has been talked into a shortcut yet.

Get a ring and get a wedge of their sharp cheddar in the same trip. Slice both thick. That's the whole board — you don't need anything else on it.

Jay Hippey and George Sirianni started Denver Meat Co. in 1969 with a recipe and a building on Railroad Street.

They didn't have a marketing department. They had a smokehouse and a decision to not cut corners.

Today Matt Forney — George's grandson — runs the same operation out of the same building. The casings still get tied by hand. The smoke is still real hickory. Nobody's found a good reason to change any of it.

Fifty-seven years is a long time to not get bored of doing something right.

Everybody's building boards now. Fine. But most of them start with the cheese, and that's backwards.

Start with the ring. Slice it thin, roll the slices into loose rosettes, and put them down first. Everything else arranges around that.

Then: sharp cheddar cubed. Snack sticks fanned out. Sliced red apple. Walnuts. Dried apricots if you've got them. Crackers around the edge.

Grainy brown mustard in a small bowl, dead center.

Rosemary sprig on top so people think you know what you're doing.

Twelve minutes of work and you're the one who brought the good thing.
