New year, new goals 🙌 One of ours is to incorporate more meatless meals this , and our Panang Curry makes it effortless. Save this delicious recipe for your next meal 😋

INGREDIENTS:⁠
◽️ 1 tablespoon of oil⁠
◽️ 1/2 yellow onion 🧅, sliced⁠
◽️ 1 red bell pepper, sliced⁠
◽️ 1 cup of broccoli 🥦 florets⁠
◽️ 1/2 block of tofu (extra-firm or super-firm)⁠
◽️ 16 ounces of Panang Curry sauce⁠
◽️ 2 cups of cooked rice 🍚⁠
◽️ Thai basil or cilantro, sliced⁠
◽️ Chopped peanuts 🥜 or cashews⁠
◽️ 1 lime, sliced into wedges⁠

DIRECTIONS:
1. In a large skillet over medium-high heat, add oil. Once hot, add onion and saute for 2 minutes. Add bell pepper and broccoli. Hand-crumble tofu into the skillet in bite-sized chunks, and allow to brown slightly on the pan before mixing with a spatula.⁠

2. Once the tofu has lightly browned, add the panang curry sauce and simmer for a few minutes until bubbling and heated through.⁠

3. Serve over rice and top with basil, chopped nuts, and a lime wedge.

-Papaya Salad
-Hot & Sour Soup
-Mango + Sticky Rice

GREEN PAPAYA SALAD WITH SHRIMP:
- 1 cup roasted peanuts , unsalted
- 20 snake (or French Green) beans , cut in 2″ pieces
- 3 cups grape tomato, cut in half
- 4 cups green papaya, shredded
- 1/2 cup Thai basil leaves
- 1/4 cup Yai's Thai Ginger Garlic Stir-Fry Sauce (as dressing), or more to taste
- (optional) Top with Shrimp

Directions:
1. Crush peanuts: Place peanuts in a mortar and pestle. Pound lightly to break them up into largish pieces, not into powder. Transfer to bowl.
2. Bruise snake beans: Add snake beans to mortar (in batches if needed). Pound to bruise, split and soften (they are raw, so they need to be bashed to soften). Add to Dressing.
3. Crush tomato: Grab handfuls of tomato, crush with your hands then add into the bowl.
4. Add papaya: Add papaya and 3/4 of the peanuts. Toss well with 2 wooden spoons or tongs.
5. Once everything is coated in Dressing, immediately pile up onto plates. Spoon over some dressing (there will be a bit of dressing still left in the bowl, that's normal). Garnish with Thai basil leaves, sprinkle with remaining peanuts. Serve immediately & enjoy.

Almost 10 years ago, co-founders Leland & Sarah were on a hike when they decided to take the leap and start a Thai recipes company. Leland's Yai's recipes were just too good not to share with the world! Yai's Thai was born. It's been a wild ride but our mission and values remain the same: to inspire joy and bring people together through authentic, delicious, Thai flavors.
