Russian River 110 West Coast Pils — crisp, citrusy, stone fruit vibes and super drinkable at 5.2%. Hoppy like an IPA but goes down like a Pilsner. Plus, a portion of proceeds supports Russian Riverkeeper.

Recipe (1 serving):
¾ oz Cascahuín Reposado
¾ oz Dominio Mezcal Verde
1 oz XILA
¾ oz Licor del Sobador
Stir with ice , strain over big cube , orange peel garnish.

Popolada (Tropical-Herbal Highball)

A piña colada–inspired highball with mezcal’s smoke softened by creamy coconut and pineapple, then lifted by a whisper of absinthe for an anise snap. Beachy, layered, and dangerously sippable.

Ingredients (1 serving): 1
¾ oz (50 ml) mezcal
¾ oz (20 ml) fresh lime juice
1 oz (30 ml) coconut cream
1¾ oz (50 ml) fresh pineapple juice
2 dashes absinthe

Instructions: Add all ingredients to a shaker with a small scoop of crushed ice (or a few cubes). Whip-shake hard for 8–12 seconds until frothy and ice-cold. Fill a highball glass with crushed ice, pour the mix over it, and mound more crushed ice on top if needed. Garnish with a pineapple wedge and metal straw.
