Sweet and Savory Baked Pork Loin
Ingredients:
For the Pork Loin:
2-3 lb pork loin 🐖
1/4 cup olive oil 🫒
2 tbsp soy sauce 🥢
3 tbsp honey 🍯
2 tbsp Dijon mustard
4 cloves garlic, minced 🧄
1 tsp smoked paprika 🌶️
1 tsp dried thyme 🌿
Salt and black pepper to taste 🧂
Optional Garnish:
Fresh rosemary sprigs 🌿
Orange slices 🍊
Let’s Make It Happen:
Preheat Your Oven:
Set your oven to 375°F (190°C). Grease a baking dish or line it with foil for easy cleanup.
Prepare the Marinade:
In a bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, garlic, smoked paprika, thyme, salt, and pepper.
Marinate the Pork:
Pat the pork loin dry with paper towels and place it in the prepared baking dish. Pour the marinade over the pork, ensuring it's well-coated. Let it sit for 15-20 minutes for the flavors to soak in (or marinate in the fridge for up to 2 hours for deeper flavor).
Bake the Pork:
Cover the baking dish with foil and bake for 25 minutes. Remove the foil, spoon some of the marinade over the top, and continue baking uncovered for another 20-30 minutes, or until the internal temperature reaches 145°F (63°C).
Rest and Slice:
Let the pork rest for 5-10 minutes after baking to lock in the juices. Slice into medallions.
Serve:
Arrange on a platter and garnish with fresh rosemary and orange slices for an elegant presentation.
Tips for Extra Magic:
Pair with roasted vegetables like carrots, sweet potatoes, or Brussels sprouts for a complete meal. 🥕🥔
Use maple syrup instead of honey for a deeper sweetness. 🍁
For added texture, sprinkle with chopped pecans or walnuts before baking. 🌰
