To get the most peppers from your plants, trim the central growing tip (topping) when the young plant has four to six sets of true leaves. Also, pinch off the very first early flower buds, and clear away the lower leaves and inner suckers to direct energy into fruit growth.

Early-Season TrimmingTopping small varieties: Cut the main center stem just above the fourth or fifth leaf node on smaller peppers (like jalapeños, habaneros, and shish*tos).
This forces the plant to grow wide and bushy instead of tall, doubling your branching and flower sites.

Skip heavy topping for bell peppers: Large-fruited varieties like bell peppers naturally form a strong Y-shape. Heavy topping can hurt their total yield, so only clean up their lower growth.

Pinch early blossoms: Remove the first tiny flower buds that appear during the first two to three weeks after transplanting.

This stops the plant from wasting energy on early fruit, helping it build a stronger root system first.

Maintenance and Growth Trimming Remove lower leaves: Snip off any leaves and branches touching the soil. This stops dirt-borne plant sickness and keeps crawling bugs away.
