🥒 Too many cucumbers and completely sick of pickling them?

This has become my new favorite way to use up the cucumber overload from the garden. Think cucumber sorbet turned into a cold, crisp summer drink. It’s light, refreshing, and the measurements are VERY forgiving.

🥒 Cucumber Refresher

3–4 medium cucumbers, peeled & roughly chopped
½–¾ cup apple juice
⅛ cup Blake Hill Rhubarb & Honey Shrub
Dash of salt
2–3 cups ice
Sparkling sugar, optional

Throw everything except the sparkling sugar into the blender and blend until smooth. Taste and adjust the apple juice, shrub, or sweetness however you like it.

I actually used the Blake Hill Rhubarb & Honey Shrub because I didn’t have another acid on hand. Normally I would have reached for lemon, but the rhubarb and honey turned out to be fantastic with the cucumber. It’s also a wonderful way to use those Blake Hill shrubs for something besides the usual cocktails and mocktails.

Pour it ice cold and top with a little sparkling sugar for extra sweetness, a little crunch, and a pretty finish.

Super refreshing, not overly sweet, and finally something different to do with the annual what the hell am I going to do with all these cucumbers? problem. 🥒
