Skinny Guinea Farm

Skinny Guinea Farm Our little attempt to work with nature and farm. Life was not meant to allow us to merely exist.

We must be in harmony with nature, contributing more than we take.

We now have pork! We picked up pork from our two Mangalitsa pigs this morning and will have them available at the Kansas Grown Inc. - Andover farmer's market this Saturday, July 25th.

Why Mangalitsa pork? Well, it is a heritage breed that takes over a year to mature for slaughter which means better marbling. Mangalitsa pork more tender and more marbled than other pork. This means it has a high level of creamy, rich intramuscular fat. And marbled fat = flavor!

Also, we raised these two pigs on two acres of pasture, moving them around the area. This let them be pigs and not only feast on store-bought feed and our table scraps, but root around to their hearts delight, eating grass and grubs. We also fed them copious amounts of acorns from our 5 oak trees which they loved.

Hams, pork chops, ground pork, sausage, bacon and whatnot, fresh from a local processor and ready to go. Try something different, you won't get this in any grocery store. [I'll put a price list in the comment section as soon as I get it formated]

If you prefer to get your food directly from a local farm rather than through a factory farming system with interstate logistics networks we have an offer for you. Authentic pork, raised on pasture right here in Derby and processed just south of us in Mulvane. Ok, the pigs are raised about half a mile from Derby city limits, but as close as you can get.

This isn’t just any pork either, but pork from a heritage breed, the majestic Mangalitsa. Well, if that sounds appealing you are in luck because we have two fine hogs who have a date with Stroots Locker and are looking for anyone interested in purchasing them.

These Mangalitsa pigs are a heritage breed, grown on pasture where they are free to roam and root the soil. Free to be pigs. (They also did a good job digging up areas we will later turn to gardens). It makes for happier pigs and better quality meat.

Mangalitsa pigs are slower growing than most other hog breeds, taking 6 month longer to finish than most breeds of pig. This results in more intra-muscular fat and a richer taste. Basically, mangalitsa pigs trade quality of meat and taste for a slower, more expensive growth process.

Our pigs are fed a variety of grains and plenty of slops – leftovers from our table plus overages in chicken and duck eggs that are not of saleable quality. They also enjoy the acorns that fell from our half-dozen oak trees, improving that marbled fat that is so critical to flavor.

We are asking $300 for half a hog or $575 for a whole hog – plus the processing fees charged by Stroots. The type of cuts and processing will be arranged directly between you and the processor. A half of a hog should net anywhere between 65 and 90 pounds of pork.

And no worries if this is too much for anyone. We will also be selling pork by the cut from both our little farm and at the local Kansas Grown Wichita and Andover Farmer’s Markets.

Interested? Send us a Direct Message and we will work out the details. Thank you.
