Three-Fold Brewing

Three-Fold Brewing My home brewery In August 2011, I decided to start back in home brewing beer, which I hadn't done since I was 21.

This is a place to share that experience with others.

Hey, look at that. One long weekend, two beers brewed! On Friday we got a a Belgian Golden Strong Ale, which came in at 1.082 OG and an estimated ABV when finished of 10.2% and an American IPA today with lots of citrus flavor in the hops (CTZ, Centennial, Citra, and Amarillo) that I'll also be dry hopping with Citra, Amarillo, and Falconer's Flight. That one checked in at 1.055 OG and an estimated ABV of 6.04%. That's two down and two or three to go before West Fest gets here!

Holy crap. I haven't posted in over 6 months. Worse, I haven't brewed in almost a year! I had planned to do so about 6 weeks ago but my grain mill decided not to work. However I'm getting myself on track today. I'm brewing up a Belgian Golden Strong Ale for West Fest. It should check in around 10% ABV when done. Then next weekend I'll be making an IPA. Two more to brew for West Fest in short order after that. Gonna be busy!

I was thinking about this last night and decided to write something over my lunch today. It went on a bit long, but I hope it's helpful!

One thing that a lot of my friends have asked me since I started brewing is how I come up with my recipes and if I use those recipe kits that they sometimes see in the stores. I’ll admit that my first ever brew was from a recipe kit – Brewer’s Best English Special Bitter. I had just ordered an equip…

New post up! I'm asking for suggestions on beers to brew in the cold from everyone. Right now I know that I'm going to be a pilsner, but that's it. 2 or 3 more good suggestions would be really welcome.

It’s winter. Yes, I know what you’re going to say – it’s not TECHNICALLY winter until Dec. 21. As that’s my birthday, I’m acutely aware of the fact that it is in fact the first official day of winter. However, here in Chiberia, where we are expecting another Polar Vortex this year, the reality of th…

Bottled the Night Spear Stout and The Hoppening this weekend. The first ended up at an ABV of 5.8% which I think should be perfect for a mellow winter stout. The second is a monster. Over 11% ABV. Both taste amazing. I'm not exaggerating when I say this might be the best beer I've ever made. Super excited to try this again in a few weeks with some carbonation added to the mix.

Really excited for The Hoppening - the Black Belgian IPA I brewed today. It came in right on target for gravity at 1.094. Hit my mash temperature right on at 152 for what I expect will provide a lovely medium body to go along with the 4 oz. of hops in this monster.

And yet another recipe!

And yet another recipe!

This is the stout that I’m going to brew with my brother-in-law in the near future. I expect it to be black as night, malty smooth, with a little something special at the end. I’ll be using an oak spiral for the last five days which I’ll be soaking in bourbon. I’m considering some Weller’s bourbon,…

New recipe!

This is my upcoming Belgian Black IPA. It’s going to be a beast of a beer, and I am incredibly excited about it. The basic idea came from my friend Josh, and this beer will be his prize for winning our fantasy football league in 2013. Sorry it’s taken so long, but it is being made this weekend and y…

New post up! Two new recipes probably coming today.

I recently finished up a trial at work, which consumed all of my time that I would have liked to be brewing in September and October. However, with that done, and the next week starting in two and a half weeks, I hope to get a couple of brews in over the next two weekends, before the weather turns a…

I posted a new recipe to the website today.

I'll add some pictures of the beer itself a little later. Also a review of Omega Yeast labs coming soon!

I’ve increasingly found it challenging to come up with names for my beers, staying within the theme of science fiction/fantasy. While this is a bit of a departure from my normal names, I think it works all the same. Dwarves are renowned for their love of ale, and this beer is a nice hearty one that…

New post on the website! Lots of updates and I promise to more to come in the near future!

I have really done an absolutely horrible job updating on this site. I promise that it’s my intention to improve that as we go forward. Not that I really have a defense for this per se, I will at least say that things have been incredibly, INCREDIBLY busy in the past year. Of course I got married in…

It's brew day! 10 gallon batch of an American Brown Ale for Mike and Beth's wedding, along with bottling another batch made about 6 weeks ago. More bottling this week for West Fest, and more brewing to come. Exciting times!
