A twist on a classic Monte Cristo, this Corned Beef Monte Cristo is sure to hit the spot!🥪✨ This sandwich layers corned beef, cheese, and caramelized onions between two sweet brioche slices. Ingredients📋:
- 2 slices of leftover corned beef
- 2 slices of brioche
- 3 eggs
- 1 slice of Swiss cheese
- 1 onion, thinly sliced
- 1 tbsp apple cider vinegar
- 1 tbsp deli mustard
- Garlic, onion, and chili powder
- Olive oil
- Salt and pepper, to taste
Directions📝:
- Place your bread in a toaster or in a pan. Lightly toast your brioche on both sides.
- Pour some oil into a hot pan and add your sliced onions. Cook them until caramelized, adding 1 tbsp of apple cider vinegar to de-glaze the pan. Once mixed, removed from heat and set aside in a bowl.
- Spread mustard onto your bread and layer 2 slices of corned beef, a slice of Swiss cheese, and your caramelized onions.
- Crack 3 eggs into a bowl and season with salt, pepper, garlic, onion, and chili powder. Mix your eggs with a fork.
-Dip your sandwich into the egg mixture and place your sandwich into a pan over medium heat, cooking the sandwich on both sides.
- Cut in half and serve.
