In our last post, we mentioned surprises… well, surprise! We’re making sandwiches! Starting today to celebrate four years in business and continuing on Saturdays to start. We’ll announce an official schedule when we have it. Today, we’ve got two options: mortadella, stracciatella (made in house!), local greens OR taggiasche olive, pecorino toscano spread, mama lil’s hot peppers & local greens. All on schiacciata made in house. As of posting this, we have limited availability (thanks for a great morning!) but more to come! Aperitivo hour is still on, too! 2-4pm! We love you, Dexter! 🎈

Today marks four whole years slingin’ pasta on Broad Street! 

We’ll be celebrating on Saturday afternoon with a nice spread of snacks, sips and surprises – call it Carosello aperitivo hour from 2-4pm! We hope you’ll stop by 💛

Thank you for embracing our little pastificio tucked behind a small main street in a small town. Somehow, hundreds of you walk through every week and keep us inspired and motivated day after day, year after year. Cin Cin! 🥂

Here is one of our personal favorites - heirloom wheat spaghetti made with Janie's Mill Turkey Red wheat flour + durum semolina. Our pasta is made with only U.S. grown certified organic wheat + water. Who cares about organic? We do – a great deal, and here are just a few notes as to why:

The environmental accumulation of glyphosate (Roundup) is responsible for widespread insect decline, with studies showing impacts on a wide range of traits from immune responses in pollinators to gene expression in beetles. We care about species richness, from plants and insects to the birds, mammals and other animals that feed on them.

Glyphosate exposure is one of the leading causes of illness for farmworkers handling these chemicals. While the exposure risk isn’t as great with grain production as compared to vegetables, when given a choice between supporting giant agrochemical companies or not, it’s an easy one for us.

Conventional agriculture relies on the usage of synthetic (fossil fuel based) fertilizers and chemical inputs. These are extremely energy intensive to create and are heavy polluters, especially Nitrogen based fertilizers created by converting atmospheric nitrogen into ammonia for agricultural use. In organic systems, nitrogen is fixed or made available to plants when naturally occurring soil microbes break down natural food sources like manure or compost. Another easy choice to lower our carbon footprint.

Studies have shown time and time again that organic practices result in better water and nutrient holding capacities of soils as opposed to conventional systems. This means more resilient agricultural landscapes and healthier watersheds.

There are still huge concerns with large scale monoculture croppings in organic systems, including broad spectrum pesticides allowed in organic farming (even if derived from natural sources). However, the usage of less harmful fertilizers, focus on crop rotation and soil health makes the investment in certified organic grains a clear choice for us – and has been since we started making pasta in 2019.

The corporate consolidation of behemoth agrochemical companies, among other factors, has our industrial food system in a fragile state, with farmers around the country hurting more than ever. It’s easy to forget that everything we buy in the grocery store is an agricultural product at its core – with policy, regulations (or lack thereof), and corporate greed largely shaping our food choices. We aren’t experts, but as small producers and farmers ourselves, we are always thinking about where our food comes from and encourage you to do the same ❤️

WE ARE CELEBRATING LOVE & FRIENDSHIP THIS WEEK with back to back events. Come visit us this Friday for Galentine’s from 5-8pm! We’ll be sampling a few new wines and have a spread of snacks and sweets while you browse. Make sure to stop by all the participating merchants downtown!

Then on Saturday, Carosello is going steady with Ellen’s Fine Goods for a Valentine’s pop-up from 11-2 (or sold out). Ellie always has something special up her sleeve; you won’t want to miss this!

Meet one of our newest shapes, paccheri! This is an old shape originating from the Campania region in southern Italy. Its name comes from the Neapolitan word for “slap”, referring to the sound made when sauce hits these thick tubes.

Legend has it paccheri also helped smuggle cloves of garlic into Austria in the 17th century, when the import of Italian garlic was banned. They say 4 cloves per tube!

This is a firm, hearty pasta that will stand up to your most robust and rich sauces. It’s versatile for many preparations and could even be stuffed & baked!

As another year comes to an end, we’re reflecting on the last twelve months and even further back to the beginning, and we are still absolutely flabbergasted by what this space has become. 

When we signed the lease on a commercial property, we had every intention of being a wholesale dried pasta company. We were concerned with access to 3 phase power, a good loading area, a good price and little else –  certainly not our visibility as a brick and mortar. 

But our space had a small retail area already carved out, so why not put in a fresh pasta counter and a few shelves? Mike would be in the back making pasta and shuffle up front when someone were to walk in – maybe a few times per day? I’d handle the books and continue managing our small CSA farm and plant nursery.

Fast forward a few years, and we’re seeing hundreds of you walk through our door every week, while also shipping and delivering dried and fresh pasta to dozens of retailers and restaurants as planned (hoped). 

We’re here as the seasons change, offering plant starts in the spring and heirloom tomatoes in the summer. We’re hand filling ravioli, baking bread, cooking sauce and more. We’re able to support small businesses we admire in a much bigger capacity by giving them space on our shelves. It’s the two of us plus a team of three, and we couldn’t do it without them. A far cry from what we initially conceptualized. 

These walls have provided a place for community and conversation where we bond over our shared love of good food. But as the months (and now years) carry on, we’re watching your kids grow, we’re eager to hear about your projects and how your garden panned out. We talk about your travels, your home remodeling projects, your aging parents, new grandkids, your stressors and uncertainties, too. 

We’re far from perfect and always wanting to do more, to be better. But as another year closes, we’re feeling proud of all that we offer and grateful for all that you give us in return. Thank you for the support and kindness you’ve shown this year and every year.
