Every syrup has a story - ours starts with cousins, beer, and a little experiment gone wrong for the better!
One night in the lab brewing spruce tip beer, we thought a garnish was in order. Leftover spruce tips became candy, or at least, that's what we were aiming for. Instead, we created something magical: an amber elixir so citrusy, woodsy, and sweet we couldn’t keep it to ourselves.
At first, it was just for friends and family. But soon we realized this was something the world might enjoy too. And so, Sucrose Fellows was born.
We’re two cousins (the Fellows) turning the harvest from our family’s blue spruce trees into small-batch spruce tip syrup. It’s perfect on pancakes, stirred into cocktails, drizzled over ice cream, or straight from the spoon.
