Usually if someone offers me an unsalted butter, particularly in the context of a food show where I might be trying hundreds of new foods just to find a few that we will bring back to our case or shelves, I’ll take a pass. I mean, it’s butter. Of course it should have salt.

But last summer at the Fancy Food Show I tasted the Valserena unsalted cultured butter imported by rogerscollection and it stayed on my mind these long, tariff-filled months. I tasted it again at the show a few weeks ago and finally admitted defeat: I would bring in this unsalted butter.

This exquisite butter is made from the cream skimmed from Parmigiano-Reggiano production by Valserena Dairy, founded in 1879 and the oldest Parmigiano dairy still operating. Here’s a little more from the folks at Rogers Collection:

“Valserena, one of only four dairies in the Consorzio di Sola Bruna, is renowned for its exceptional butter, crafted from the milk of Brown Swiss cows raised on their own farm. Every step, from cultivating fields to producing Parmigiano Reggiano and butter, is carefully managed to ensure the highest quality. Their butter, made from milk fed exclusively on the farm’s own alfalfa, boasts a rich, creamy texture with delicate grassy aromas and a smooth, mild flavor—highlighting the unique qualities of Brown Cow milk.”

I recently had the pleasure of getting to know the wonderful folks at Café Deux (https://www.instagram.com/cafedeuxx/) , a vibey bistro in Harrison that is putting out delicious food and partners with some truly incredible producers.

In honor of Bastille Day, we're hosting our first collab event this Thursday, featuring a five-course meal by Chef Alex Aparicio with five paired wines from Skin Contact, an importer of natural and organic wines, and of course cheeses from Bloomy.

I’m back with an update on tariffs. Spoiler alert: they’re still in place and more are coming. This is absurd.

Thanks Adam Moskowitz for reminding me I needed to do an update.

If you want to be a big nerd too I highly recommend listening to Strict Scrutiny Podcast Leah Litman Melissa Murray Kate Shaw who do such an incredible job explaining Supreme Court mishegas that even a cheesemonger can wrap her head around some of it. They also came up with the “emotional support billionaire” concept which I think about at least once a day because it is just 🎯.
