100 grams of einkorn berries milled at #10 setting in my Mockmill 200 equals 100 grams whole grain flour. Settings matters so the coarser we set our mills
We reduce the flour amount slightly. @ #5 it milled to 99 grams

Yesterday was quite a unpredictable day here on my 150+ year old farmhouse. The humidity here in South Carolina is sometimes very unbearable but when it comes to baking it really affects things so not able to put out my bagels yesterday but I did get out two loaves of bread, a batch of tortillas, a pound of spaghetti and some focaccia Genovese overall a productive day.

Good morning group! Today I am going to undertake making a batch of bagels, some focaccia Genovese, and two I don’t wanna say mini, but I called them Small french Boules. I will post pictures later on in the day when everything is completed. Any Einkorn baking going on today folks?
