After ten very memorable years, Jackie and I have retired and have sold Walnut Hill. Thank you all for your patronage over the years. We are pleased to report that after the new owners get settled in, they will continue to run Walnut Hill as a B&B and event venue under a new name. Stay tuned for further news.

Walnut tree taping update. It turns out that if you taper the end of the plastic tube that goes into the tree, and add a few holes kind of like a drainage catheter, you get about four times more sap that if you just jam the end of the tube into the tree. We are hoping to collect about 10 gallons of sap which should make about one quart of syrup.

After reading that the sap from walnut trees can be used to make syrup, we decided to tap a few trees. We bought some five gallon food grade plastic buckets and plastic tubing at Home Depot, drilled a few holes, and now we are in the syrup business. . . maybe. To be continued.

Things are usually pretty quiet here at Walnut Hill, but when one of our neighbors fell off a ladder, the quiet was shattered by the sound of a medical helicopter. The pilot landed in a small space behind the church catty corner from us. I’m happy to say our neighbor is doing fine and is back home.

It may be snowing elsewhere in the country, but it is definitely spring here in Donegal!
