Grass raised, grain finished, dry-aged beef!

We’re ready! Are you? It’s that time of year. Now taking reservations for this year’s harvest. Boxed beef will be available early September. A side of beef? Quarter? Full beef? Our steers are about 1200 lbs on the hoof. When we ranch butcher them they yield about 60% of that, or about 720 Lbs. We call that “hanging weight”. We then dry age the sides about 14 days, which causes the meat to be more tender and flavorful. At that point the custom processor cuts and wraps the meat in portions and cut styles into paper packaging. This then yields about 60% of that hanging weight. So, from one whole beef you get about 450 lbs, cut and wrapped. Halves and quarters are the portions of that whole.
