Prayers are very much appreciated for all that are in the path of this storm. Especially our farmers and livestock. You’re a blessing. Love you❤️🙏🏻❤️

BEEF ENCHILADAS are perfect for a quick and delicious weeknight meal! It’s an easy, family-friendly way to put beef at the center of the plate!

Alabama Cattlemen's Association
Beef. It's What's For Dinner.

Ingredients

1 pound lean ground beef
1/2 onion, minced
1 packet taco seasoning
2 (10-ounce) cans red enchilada sauce
2 cups shredded cheese, such as Colby Jack or cheddar
6-8 flour or corn tortillas

Directions

Heat a large skillet over medium-high heat. Add the ground beef and onion. Cook for 5–6 minutes, breaking the beef apart as it cooks, until the beef is browned and cooked through and the onion is tender. Drain any excess drippings.

Add the taco seasoning—or the individual seasonings—and 1/2 cup of the enchilada sauce to the beef mixture. Reduce the heat to low and simmer for 5 minutes. Remove from the heat and stir in 1/2 cup of the shredded cheese. Set aside.

Preheat the oven to 350°F. Spray an 8x8 baking dish with non stick spray. Place enough enchilada sauce into the baking dish to coat the bottom of the dish. Spoon the beef mixture down the center of each tortilla and roll tightly. Arrange the enchiladas seam-side down into baking dish.

Pour the remaining enchilada sauce evenly over the enchiladas and sprinkle with the remaining shredded cheese.

Bake for approximately 25 minutes, or until the enchiladas are heated through and the cheese is melted and bubbly. Let rest for 5 minutes before serving.

Kathy’s Kitchen Tip: Garnish with your favorite toppings such as sour cream, sliced jalapeños, diced tomatoes, green onions, or fresh cilantro. Serve with Mexican rice and beans for an easy, satisfying meal.

Happy Taco Tuesday! GORDITO BEEF TACOS

Seasoned ground beef and melted cheese are tucked inside freshly fried flour tortillas, then finished with all your favorite taco toppings.

Alabama Cattlemen's Association
Beef. It's What's For Dinner.

Ingredients

1 pound lean ground beef
1 packet taco seasoning or Homemade Taco Seasoning, below
⅓ cup water or beef broth
½ cup shredded cheese
4 to 6 flour tortillas
Vegetable oil, for frying
Toppings of choice, such as shredded lettuce, diced tomatoes, sour cream, salsa, avocado or additional cheese

Homemade Taco Seasoning

1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
½ teaspoon paprika or smoked paprika
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon onion powder
Pinch of cayenne pepper, optional

Directions

1. Prepare the beef: In a large skillet over medium-high heat, cook the ground beef until browned and no longer pink, breaking it apart as it cooks. Drain any excess drippings.

2. Season: Add the taco seasoning and water or beef broth. Stir well and simmer, uncovered, for 5 to 10 minutes, stirring occasionally, until the liquid has reduced and the beef is well seasoned.

3. Add the cheese: Stir the shredded cheese into the beef mixture until melted and creamy. Reduce the heat to low and keep warm.

4. Fry the tortillas: Pour enough oil into a skillet to lightly cover the bottom and heat over medium-high heat. Working with one tortilla at a time, carefully place it in the hot oil and fry briefly on each side until lightly golden and beginning to crisp.

5. While the tortilla is still warm and pliable, gently fold it in half to form a taco shell. Transfer to a paper towel-lined plate to drain. Repeat with the remaining tortillas.

6. Assemble: Spoon the warm cheesy beef mixture into each fried tortilla and add your favorite toppings. Serve immediately.

We’re at the cabin this morning, so instead of sharing a Sunday picture, I thought I’d share one last song I sang with Butter and Grit 🎶Jesus Loves Me🎶 This is the first song I ever learned as a child and it’s still my favorite to this day.

HaPPy Sunday! You are loved and such a blessing!!!

Earthquake Cake

Rich, gooey and wonderfully over-the-top, this old-fashioned Earthquake Cake gets its name from the cracks, swirls and pockets that form as it bakes. Chocolate cake, coconut, toasted pecans and a sweet cream cheese filling come together in one irresistibly decadent dessert.

Ingredients

• 1 cup sweetened shredded coconut
• 1 1/2 cups chopped pecans, divided
• 1 package German chocolate cake mix, plus ingredients called for on package
• 8 ounces cream cheese, softened
• 1/2 cup butter, melted
• 2 teaspoons vanilla extract
• 2 cups confectioners’ sugar
• 1/2 cup semisweet chocolate chips

Directions

1. Preheat oven to 350°F. Grease a 9-by-13-inch baking dish.
2. Sprinkle the coconut evenly over the bottom of the prepared baking dish, followed by 1 cup of the pecans.
3. Prepare the cake batter according to package directions. Pour the batter evenly over the coconut and pecans.
4. In a large bowl, beat the softened cream cheese, melted butter and vanilla until smooth and creamy. Gradually beat in the confectioners’ sugar until well combined.
5. Fold the chocolate chips and remaining 1/2 cup pecans into the cream cheese mixture.
6. Drop spoonfuls of the cream cheese mixture evenly over the cake batter. Using a butter knife, gently swirl the cream cheese mixture into the batter. Do not overmix.
7. Bake for 35 to 40 minutes, or until the cake is set and a toothpick inserted into the cake portion near the center comes out with only a few moist crumbs.
8. Allow the cake to cool in the pan on a wire rack before slicing and serving.

Kathy’s Kitchen Tip: Don’t worry if this cake looks cracked, uneven and a little messy when it comes out of the oven—that’s exactly how an Earthquake Cake is supposed to look. Those gooey pockets of cream cheese, chocolate and pecans are what make it so good.

I heard Taylor Swift was dropping her new song today so I thought I would too🤣🤣🤣 OK, truth revealed! I was so intimidated to sing with this dynamic duo, but I tried. Butter and Grit are so AMAZING! My singing may not be that great but my steak was delicious🤣
