Whatโs the difference in light honey and dark honey?
Honey is considered one of the greatest marvels in the universe.
There is a large variety of honey types with a range of different colors, textures, and tastes. When it comes to color, honey can range in hue from nearly colorless to dark brown. So what gives each honey its distinct color and taste? That comes down to the specific flowers and plants that honey bees forage on.
Dark honey is usually richer in taste and texture, with a more bold taste than lighter varieties. It also tends to have a lower water content, making it more potent per ounce.
Dark honey contains a higher concentration of antioxidants than light honey. Research from the University of Illinois found that dark honey contains TWENTY times the antioxidants found in lighter honey.
Why is this important?
Because antioxidants can help the body neutralize free radicals that can lead to cancer, premature aging and many types of diseases.
Both varieties of honey will have local allergen exposure and protection, however the color and tastes are vastly different.
