A new ingredient for your kitchens! Pepita miso, made from roasted organic hullless pumpkin seeds grown in the Finger Lakes in NY- about 30 minutes from my hometown. Sometimes we talk about a “sweet” miso - sweet in the sense that it has slightly lower salt, shorter fermentation- which yields a sweeter note. Pepita miso is this- but additionally, the roasted pumpkin seeds give us a different kind of sweetness, almost a frangipane quality. Absolutely fantastic broth miso, but also one that would be excellent for baking applications, or any dish that has a sweet-salty balance.
