✨ I’m just going to come out and say it:
I am not usually a pork roast fan.

But this recipe? It’s officially on permanent repeat. It’s the perfect balance of sweet peaches, savory, and just a little kick of pepper jelly heat. Plus, it basically cooks itself.

Prep time: 10 mins | Cook time: 6–7 hours (Low) | Servings: 4-6

Ingredients
1 (2.5 lb) boneless pork roast
Garlic salt and black pepper, to taste
1 can (15 oz) sliced peaches (packed in juice or light syrup)
¼ cup pepper jelly
2 tbsp soy sauce (or Worcestershire sauce)
2 tbsp cornstarch (plus 2 tbsp cold water for a slurry)

1. Prep the Roast
Place the boneless pork roast into the bottom of your slow cooker. Season all sides generously with garlic salt and black pepper.

2. Whisk the Sauce
Drain the juice from the can of peaches into a medium bowl (set the peaches aside for later). To the juice, add the pepper jelly and soy sauce (or Worcestershire). Whisk until well combined and the jelly breaks up.

3. Slow Cook
Pour the sauce directly over the pork roast, then scatter the reserved peaches around it. Cover and cook on LOW for 6 to 7 hours until the pork is fork-tender.

4. Thick the Glaze & Serve
Shred: Remove the pork from the slow cooker and let it rest for a few minutes. Slice it thin or shred it apart.
Thicken: Pour the remaining liquid from the slow cooker into a saucepan on the stove and bring it to a boil. Whisk your cornstarch and cold water together to form a smooth slurry, then pour it into the boiling juices. Let it bubble for 1–2 minutes until thickened into a glossy glaze.

Combine: Toss the sliced pork and peaches back into the glaze to coat.

To Serve: Pile it high over a bed of fluffy white rice alongside your favorite green vegetable.

Happy Thursday friends! I hope you are having a great week! I am so excited that so many kids and parents have been reaching out about fair midways! I just want to take a second to clarify a few things:
🎡
1) Morning Midway sessions are not held for anyone. The sign up form will be released in late June/ early July. Once released a parent/guardian may complete the form. A link will be sent to the parent to sign a contract and select a preferred time slot. Slots will be considered locked in once the contract has been signed.
🎠
2) Fridays will only be available to those with banners. This will also be a first come first serve, KTP will not hold time slots. Times will be released on Thursday afternoon/evening. Once released a Parent/guardian may sign up by completing the form, signing the required contract, and select a time slot. Slots will be considered locked in once the contract has been signed.
🎟️
3) Evening midway sessions are for showmanship winners only and are offered by fair officials. KTP will work with fair officials to determine the time of the session(s), this will ensure that the proper fair individuals are aware. These sessions will require at least 4 individuals as an es**rt to the location, including a parent/guardian.
