Our very first nealsyarddairy file will hit the cheese case tomorrow! Welcome Hafod, a Welsh-made cheddar that is sure to please everyone! This cheese is handmade so each batch arrives tasting a little different each time. The batch we were able to get our hands on is “supple, sharp, meaty with some tangy yogurt notes and a slight spice on the finish”..

🇨🇭 Meet Challerhocker!🇨🇭

Chällerhocker (“hollerhocker”) is made by the cheesemaker Walter Raas in the Swiss Alps. Walter wanted to branch off from your typical Alpine-style cheeses like Appenzeller or Gruyere despite his robust training with Appenzeller.

This cheese is umami rich, bringing sweet onion and roasted almond notes. It’s extremely versatile and will be a workhorse on a cheeseboard, your next grilled cheese, or an evil mac and cheese.

Pairs extremely well with onion confit/cornichons, oaked Chardonnay or dry Rieslings!
