We recently acquired a small mill that allows us to crush corn into finer grits in house, further ensuring that our Chela Clara has a fresh but subtle corn tortilla finish. It will also open up possibilities for use of other corn varieties in future beers.
While we don’t make a lot of beers using adjuncts (non-barley sugar sources), when we do, we don’t believe in cutting any corners and find that using ingredients with minimal intervention provides for a uniquely fresh character.
