🥒 Veggie of the Week: Adam Gherkin Cucumbers 🥒

This week’s spotlight is on one of the most fun vegetables in the CSA share—Adam Gherkin Cucumbers!

Don’t let their small size fool you—these little cucumbers pack a big crunch!

These small, crisp cucumbers are known for their incredible crunch and slightly sweet flavor. They’re delicious eaten fresh, sliced into salads, added to charcuterie boards, or—true to their name—they’re perfect for making homemade pickles!

Fun fact: Gherkin cucumbers are picked when they’re small and tender, giving them their signature crunch and making them a favorite for pickling.

Celery adds fresh flavor and satisfying crunch to salads, soups, stir-fries, and snacks. It can be enjoyed raw with your favorite dip, chopped into chicken or tuna salad, or cooked down to create the flavorful base for countless recipes.

Fun fact: Celery is about 95% water, making it one of the most refreshing vegetables to enjoy on a hot summer day!

🌱 Veggie of the Week: Beets 🫜

Love them or still learning to love them, beets are one of the most versatile vegetables in the CSA box!

From roasting and pickling to salads, soups, and even chocolate cake, beets bring beautiful color and earthy sweetness to the table. And don’t forget—the greens are edible too! Try them sautéed like spinach or added to soups and stir-fries.

Fun fact: The deep red color of beets comes from natural pigments called betalains, which are also powerful antioxidants.

🌎 Earth Day on the Farm🦋

We’re growing more than vegetables — we’re stewarding an ecosystem.

Healthy soil acts like a sponge, holding water and nutrients while supporting a thriving web of life. Grasses and waterways slow and guide the flow of rain. Ponds and wetlands create habitat and filter what moves through the land. Trees are taking root for future generations. Native plants bring in pollinators and beneficial insects. Compost feeds the soil, and the soil feeds everything else.

Each piece is connected. Each layer adds resilience.
