From today's same day experiment, turned out fantastic. Very simple, King Arthur a.p., Tomato Magic ground tomatoes, Chicago Johnnys Co Perfect Pizza Seasoning, Romano, and low moisture part skim mozz.

Triple batch so it fits nicer in the mixer, so 3 twelve inch pizzas....

3 gm active dry yeast
183 gms warm water, seperated
30 gms lard
420 gms King Arthur Baking Company a.p. flour, seperated*
6 gms sea salt

The experiment is less about the recipe and more about trying out new techniques for same day dough recipes for a better texture and somewhat layered flavors in the dough.... The idea being that as I continue feeding the yeast it will have less of the 'metallic' flavor yeast can have while adding flakier texture than same day pizza dough. So....

Measure out 3 gm yeast and 173 gms water into mixing bowl and stir. Add 30 gms lard and 84 gms of flour and mix into slurry. Cover and leave 45-60 minutes, then add 84 gms of flour and mix into thicker slurry, cover and rest 45-60 minutes. Add 84 gms of flour and knead 3 to 5 minutes. Add 84 gms of flour, but this time leave it sitting on your dough, cover, and rest 45-60 minutes. Knead 3-5 minutes (dough will be pretty glutenous and tough at this point, no longer a slurry). Add 84 gms of flour, but don't knead, and cover and rest 45-60 minutes. Add 6 gms sea salt, 10 gms of water (this helps hydrate the dry flour so it doesn't slosh up the sides), and knead a final 3-5 minutes, starting the time AFTER dough comes together.

Place in a zip bag or cover bowl with plastic wrap and leave on counter 3 -5 hours if room isn't too warm, refrigerate as necessary if it's warm.

Roll out partially on well floured surface, rest 3 minutes or so then finish rolling. Dock, sauce, season with Chicago Johnny's Perfect Pizza Seasoning (under or above cheese, for simple pizzas I like it above cheese for color), add Romano, part skim or part skim and whole milk mozz and bake 10 minutes at 500F on a stone set on the lowest rack of your oven, heated for an hour or so.

It's complicated, but I'm complicated.

Started with ground beef and Italian sausage, dried garlic and basil leaves, a bag of spinach, 3 cans of tuttorusos tomatoes and our Sunday Gravy and Meatball Seasoning. Layered with ricotta, pasta, and gravy with loads of Romano and lift on mozzarella. Dashed some Sunday Gravy and Meatball Seasoning on each layer.

It's always too long between lasagna days for me. One pan I mixed in sauteed zucchini, onion, and bell pepper - taste tested tonight and it's superb!
