Hawk's Shadow Winery is crafting a select portfolio of Texas wines featuring our own estate varietals, and warm-climate grapes carefully chosen from Texas growers. When you arrive at Hawk's Shadow, you will have a commanding view of the Lower Estate Vineyard, and the broad expanse of nature preserves, ranches and watersheds east of the Pedernales Falls State Park. The wine tasting at Hawk's Shadow features sampling of our finished wines in bottle, including the 2011 Orange Muscat, a dry white gaining critical favor, and the new 2011 HSV Estate Red, crafted from varietals from our own vineyards. We also have several wines in barrel, tank and various stages of evolution, featured in our barrel sample tasting. Try the same grape varietal as it evolves in different types of oak, and you will pick up on aromatic qualities and flavor nuances in the wine as it moves from harvest, to cellar, to bottle.
