Did a boneless pork butt from Costco on the 26" Saturday using the slow'n sear (no water section). When it was time to wrap i scooted the lit coals to the front and added more. Ran 300 before wrap them 325-340 after wrap. Butt was 8.88lb and took 7:09 hours to cook. Not bad for starting at 11:20 in the morning.

Good day of BBQing.
Cold smoked a slab of 16 day bacon. Then bumped it up for chicken. 16 chicken thighs and a chicken halved for coworkers. Pre marinaded chicken breasts from Aldi to mix it up for work lunches. And two slices of thick bacon for a sample for a coworker.

Smoked 2 14lb briskets. End total just over 15lb. Vacuum sealed 12 pounds to sell.

Picania and tri tip soaked in my pastrami brine for 7 days. Smoked with hickory, tri-tip took 5:35 picania took 6:03. The tri tip is a little more dense than when I do it with brisket and the picania was a step above with a more airyness than with brisket. I didn't get a final weight, but this was a successful (and expensive) experiment!
