🛒 Shopping List
For the Jollof Rice
• 2 cups long-grain rice
• 1 large onion
• 3 cloves garlic
• 1 tbsp fresh ginger
• 2 large tomatoes
• ¼ cup tomato paste
• 1 red bell pepper
• 2 cups chicken or vegetable broth
• 1 tsp curry powder
• 1 tsp thyme
• 1 tsp paprika
• Salt and black pepper
• Vegetable oil
For the Fried Plantains
• 2 ripe plantains
• Vegetable oil for frying
These ingredients are commonly used in Ghanaian Jollof recipes. 
👨🏿🍳 Recipe
Step 1: Make the Tomato Base
1. Blend tomatoes, bell pepper, garlic, ginger, and half of the onion.
2. Heat ¼ cup oil in a large pot.
3. Sauté the remaining chopped onion until soft.
4. Add tomato paste and cook for 2 minutes.
5. Pour in the blended mixture and simmer for 15–20 minutes until thick.
Step 2: Season
1. Add curry powder, thyme, paprika, salt, and black pepper.
2. Stir well and cook for another 5 minutes.
Step 3: Cook the Rice
1. Add broth to the sauce and bring to a boil.
2. Stir in the washed rice.
3. Cover tightly and cook on low heat for 25–30 minutes until the rice is tender and has absorbed the sauce.
Step 4: Fry the Plantains
1. Peel and slice ripe plantains.
2. Fry in hot oil until golden brown.
3. Drain on paper towels.
🍽️ Serve
Serve the Jollof Rice with fried plantains and your choice of grilled chicken, fish, or beef. This combination is a favorite at Ghanaian parties, weddings, and family gatherings.
