Processed the raspberries so that means traditional jamming season is done. Time for experimentation with what is left in the garden before putting the equipment away until next summer. (my kids all said “uh-oh” in their heads.) jam

Last of the freezer stash being processed this week. First up, Beach Plum Port. Cranberry sauce with port and orange tomorrow, raspberry on Tuesday, grape on Wednesday. And that will round out the 2024 fruit season.

Here's the 2024 list so far:

8oz
Peach
Peach Rose
Peach Lavender
Peach Ginger
Beach Plum
Blueberry
Blueberry Lavender
Blackberry
Blackberry Rose
Grape jelly
Itasca grape jelly (jelly from a wine grape - can read about the grape here: mnhardy.umn.edu/itasca)

4oz -- for cheese boards
Lilac jelly
Violet jelly
Magnolia jelly
Itasca grape jelly

Almost all the fruit comes from my yard -- concord/wild grapes are the exceptions. Although these are not from a catering kitchen, I am very careful when I process fruit. Jars are boiled to sterilize, all utensils I use are boiled to sterilize, boiling fruit goes into hot jars, rims carefully wiped and lids placed, rings tightened, then the jars are placed back into a boiling water bath to finish processing for 20 minutes. I've burned myself in this procedure too many times to count. Jars are shelf-stable until opened; refrigerate after opening.

I haven't yet processed raspberries yet this year (soon), and don't know how much will be available as I'm also canning for favors for a wedding next summer. There's also some Asian pears still to pick and some beach plums and grapes still in the freezer.
