Delicious day for pesto. We grew half the ingredients ourselves - basil and garlic. It’s the easiest thing to whiz up in a blender if you have one and is great on everything from crackers to marinating meat. Truly a staple in our home.

Lately I have been making a weekly quiche to have a quick breakfast or lunch. While you may be thinking “that’s a little rich for me…” I keep them jammed with veggies and lean proteins to keep them blood sugar friendly. The crust is just an added bonus. Serve with a salad and you’ve got a great little meal to see you through!
