We're trying something new this season, because we want you to get the most out of shopping at the Farmers Market this year. So we're going to highlight seasonally relevant recipes each week that feature products that can be found at the market! So here's to kicking off our new series!

Recipe of the Week: Farm Fresh Breakfast Enchiladas!

The star ingredients? Fresh eggs and breakfast sausage from right here at the London Laurel County Farmers Market.

We have several vendors bringing farm fresh eggs to the market this season, plus two meat vendors with incredible local sausage and bacon. This recipe was practically made for what we have available on Saturday mornings.

Here's what you'll need:
Breakfast sausage or bacon (grab this from one of our meat vendors like Morgan Ridge Farm or Laurel Meats)
Farm fresh eggs (from any of our egg vendors Saturday, including 3 Acre Farmstead , Morgan Ridge Farm, Proffitt Farms and more!)
Onion, garlic, green chiles & sauce
Colby Jack cheese and flour tortillas

Keep an eye out too because once onions and garlic come into season, you'll be able to find those right here at the market as well!
