🌶️ How to Make Homemade Giardiniera 🥕

Giardiniera is a colorful mixture of crisp vegetables preserved in a tangy vinegar brine, and it’s completely customizable!

Ingredients(change these up to suit your taste):
• Cauliflower
• Carrots
• Celery
• Bell peppers
• Radishes
• Onion
• Garlic
• Jalapeños or hot peppers
• Mustard seeds
• Black peppercorns
• Red pepper flakes, optional
• Bay leaves, optional
• Calcium chloride, optional for extra crunch

My Favorite Brine:
• 2 cups water
• 2 cups white vinegar
• ¼ cup sugar
• ¼ cup pickling or canning salt

Cut the vegetables into small, bite-sized pieces and pack them tightly into clean jars with your desired seasonings.

Heat the water, vinegar, sugar and salt until everything is completely dissolved. Pour the hot brine over the vegetables, making sure they are fully covered. Remove any air bubbles, add the lids and allow the jars to cool.

Refrigerate for several days before eating so all those delicious flavors have time to develop. Keep refrigerated and always use a clean utensil when serving.

Enjoy giardiniera on sandwiches, salads, charcuterie boards, burgers, or straight from the jar! 🫙

POV: While the world rushes toward faster, easier and more processed… I’m finding happiness in slowing down.

Turning wheat berries into fresh flour, baking from scratch and reconnecting with the simple skills that once nourished generations. 🌾

Maybe happiness isn’t found in having more, but in returning to what matters.

I’m still on a spiralized zucchini kick! 🥒🍅

Today’s bowl: spiralized zucchini and fresh tomatoes from the garden, onion, a little seasoning, salt, pepper, and garlic, topped with shaved Parmesan. I added garbanzo beans for some protein and to make it a little more filling.

Simple, fresh, real food and SO delicious! 😋

Last night, my daughter said “Mom, how do you make food that looks so pretty?” 🤷‍♀️ I think it’s just love…. I 🫶🏻 food 😂 🥰

This is spiralized (is that a word? 😂)zucchini and chopped tomatoes (both from my garden!) with left-over chicken breast, topped with shaved Parmesan (yes, a lot of it, don’t judge me😉), salt, pepper, garlic powder 🤤 omg was it delish!
