Lemon Drop Martini

Ingredients

Optional: Lemon wedge and coarse sugar
1-1/2 ounces vodka
3/4 ounce lemon juice
1/2 ounce simple syrup
1/2 ounce Triple Sec
Lemon peel twist

Directions

If desired, moisten rim of 1 martini glass with lemon wedge and sprinkle sugar on a plate; dip rim in sugar.

Fill a shaker half full with ice. Add vodka, lemon juice, syrup and Triple Sec; cover and shake until condensation forms on outside of shaker. Strain into martini glass. If desired, garnish with lemon twist

(it’s strawberry picking season so I added a strawberry for a little extra flair😉)

Keto Crispy Reuben Roll-Ups

Ingredients:

8 slices Swiss cheese
8 slices deli corned beef
1/2 cup sauerkraut, drained well
2 tablespoons sugar-free Thousand Island dressing
1/2 teaspoon garlic powder
1/4 teaspoon black pepper

Directions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Arrange the Swiss cheese slices on the prepared baking sheet, leaving space between each slice.
Bake for 5–7 minutes, or until the cheese is melted, bubbling, and lightly golden around the edges.
Remove from the oven and allow the cheese to cool for 1–2 minutes until pliable but still warm.
Place one slice of corned beef on each cheese slice.
In a small bowl, combine the drained sauerkraut, sugar-free Thousand Island dressing, garlic powder, and black pepper.
Spoon a small amount of the sauerkraut mixture onto each corned beef slice.
Carefully roll each cheese and corned beef stack into a tight roll-up.
Return the roll-ups to the baking sheet seam-side down and bake for an additional 3–5 minutes until crispy.
Let cool slightly before serving. Enjoy warm for the best crunch and flavor.
