Muffins are such forgiving little guys you can have fun playing with lots of different whole meal flours. Pastry flour is a favorite as it yields a nice tender crumb, but hard red and white, spelt, red fife, and many more will also work beautifully. It's a great way experiment with, and taste test, stone-milled flours.

MMM scones. These flaky and delicious pastries are of course welcome at breakfast and tea-time, but are also extremely versatile. These parmesan scones (recipe online) are great with your favorite soup or pasta dish.
Scones are best with a low gluten flour to help them remain tender. Einkorn, spelt, or pastry flours are all great options. What is your go-to?
