For years, Old Quebec has been celebrated for its bold, robust flavor and authentic curing process. As we look to the future, we wanted our packaging to reflect that same premium quality and rich heritage.
Our new design honors our roots while bringing a sleek, modern aesthetic to the deli case.
Here is what is new:

Heritage Seals: Visual nods to our traditional aging process.

I must say that keeping track of new customers has become a bit more of a challenge. However, this is a fun one. We continue to expand outside of the US and across the Caribbean, and I am excited to announce the opening of another country----- Jamaica.
"Mi Deh Yah" to our new friends at Organica in Kingston!
In the early 2000’s it was nearly impossible to find healthy food options in Jamaica. What was available was difficult to find and often too expensive – not ideal for individuals or families looking to live a cleaner, more natural lifestyle.
The health food store, originally located in Orchid Village Plaza, was acquired by Abbi-Gaye and Krishna Phillipps in 2022. The husband-and-wife duo behind our store believes that any product we supply should be something they would use at home and serve to their children and loved ones.

Your orders for Old Quebec cheddar are entered and will be on the way soon. I just can't wait to see them in the store, and even more excited for the chance to come see you.

There are a lot of very good days in this business, but one of the best is GRADING DAY! Sampling and grading the cheddars in our program is one of the keys to ensuring that our customers continue to get only the best, and that is what we did. The youngest cheddar graded was born in 2024; the oldest sampled was over 36 years old!

I can, with complete certainty, tell you that our program is strong and built to last.

I have been to The Jungle, and it was great! Featuring 50 vendors and probably around 300 different brands, this year's Jungle Jim's Cheese Festival was an incredible experience. It does not get much better than spending 2 days in a room filled with people who L-O-V-E Cheese. Ranging from the youngest to the oldest, I spent the time watching people indulge in some of the best products in the business. This is an event that allows brands to show their passion to the people who actually buy and consume their products.
Grateful is too simple a word, but that is what we are. To each of you who attended, as well as the team that put this all together - Thank You!

A special shout-out to the guys at Smokin' Joe's Cheese Spreads. It was stiff competition, and you smoked in and ended up on top. I am coming after you next year :-)

There are a number of Cheese Festivals across the country, but THE one is held at Jungle Jim's International Market! The festival has had a bit of a hiatus for a few years (COVID was not kind), but it is back, bigger and better than ever. This year's event is already sold out so that tells you that people are excited.
The event is being held at the Fairfield location, in the Oscar Event Center, and you guessed it, Old Quebec Cheddar has been invited to participate!
The cheese nerd in me has been wanting to be part of this for a long time, so I am very excited. If you have your tickets, I can't wait to see you. If you are attending, shoot me a message letting me know!

OK, let's be honest. Cheese only has a few ingredients, and it has been made for close to 10,000 years. Once perfected, we recognize that is is not that hard to make, but there are ways of doing it better. Next to mozzarella, due to our love of pizza, cheddar is the most common of cheeses. There are lots of them around, some awful, many good, and a few great. Getting that perfect blend of sharp and creamy takes dedication. You can do it on the cheap by adding flavours, rapid aging, and forcing it, but that tends to result in a cheddar that is too soft, not balanced, and has sour and bitter notes. How do you overcome those faults? We find that it comes with the highest-quality milk, using a perfect culture and time. Time isn't cheap, but we are willing to make that investment to offer the best cheddar possible. We continue to make that commitment by adding 3 more truckloads of Canadian cheddar to our aging program. These blocks are still young and are being put to rest for a minimum of 3 more years before we even consider offering them to the market. Most of our cheddar ages for over 7 years before heading to the store shelves. We are committed to quality, and will continue to make the necessary investments in our brand to ensure you our very best. Currently, over 1.7 million pounds in aging means we are here to stay.
