FYI, Otto's Honey now offers melter honey in 5-gallon buckets at $150 each, with a limited supply of approximately 50 gallons per year. Melter honey is a by-product of the beeswax purification process, representing the last honey extracted from the wax, subjected to high heat. This process significantly darkens the honey and gives it a caramelized flavor. Although not a substitute for regular, raw honey, melter honey is prized for its distinctive qualities in mead-making, brewing, and baking. It's crucial to note that melter honey IS NOT raw honey making it ideal for uses that would degrade the enzymes in raw honey at a much lower price.
