We’ve harvested 40,000 pounds of sweet potatoes so far this week with lots more to go!

Before they will be ready for distribution, they need a little time to cure.

Sweet potatoes are cured for 7–10 days in a warm, humid environment—ideally around 85°F or higher with high humidity.

The curing process brings out their sweetness; complex starches are able to break down into natural sugars, creating the sweet flavor sweet potatoes are known for.

It also helps heal minor damage. The warm, humid conditions activate enzymes that help heal small bruises and scratches that may have occurred during harvest.

Curing also thickens and sets the outer skin, helping lock in moisture and allowing sweet potatoes to be stored for months.

Once they are ready, you will want to store them somewhere cool, dark, and dry. Don’t put them in the refrigerator; sweet potatoes don’t store well at temperatures below 55°F. Often a kitchen counter or pantry is just right! 🍠 ✨
