Copper conducts heat more effectively than any other metal — and for the way we make our preserves, that matters. The faster we reach temperature, the more we preserve the fruit itself. The faster it cools down, the preserve doesn’t overcook once it hits set point. The wide bottom helps moisture evaporate quickly, which means more fruit in every jar. The copper lets us adjust heat fast and gives us control no other pan can.
Some very smart people also suggest the copper works its own kind of magic on the preserves. We’ll let you decide.
