Looking for a healthy alternative to spaghetti dinner? With this zoodle dish, you won't miss the carbs for a minute. Packed with fresh flavors and healthy ingredients this dinner idea is a win-win. Get the recipe below!
Zucchini Noodles with Roasted Tomatoes and Charred Corn:Preheat your oven to 400 F. Spiralize approximately 4 zucchini or summer squash (I used a mixture of both) and lay out on a dish towel. Pat dry with another dish towel and allow to continue to dry out. Drizzle about 2 Tbsp of EVOO in a cast iron pan and add about 1 cup of whole cherry tomatoes, 4 cloves of roughly chopped garlic, 1/4 of a finely diced white onion, 1/2 tsp herbs de Provence and salt and pepper. Mix well and roast in the oven for about 20 minutes until tomatoes are lightly charred. At the same time, butter an ear of corn and lightly season with salt and pepper, wrap in tinfoil and roast in the oven as well. About 10 minutes in, open up the tinfoil to allow the corn to lightly char. When the tomatoes are ready, quickly remove your skillet from the oven, pour in a 1/3 cup white wine and pile your zoodles on top of the pan- do not mix. Return to the oven, remove the corn, and replace the skillet and cook for another 5 minutes. Slice the corn off the cob and after 5 minutes, remove the skillet. Add the corn, squeeze the juice from 1/2 a lemon, and toss to coat the zoodles in the sauce. Season with additional salt and pepper and top with some fresh herbs if you have them. Enjoy while it’s hot!

You can't beat the farmer's market this time of year. Late summer, early fall... it's the best of both worlds: a bountiful rainbow of flowers, fruits and vegetables. I can't wait to scour the stalls of tomorrow morning to see what gems I can find. One thing's for sure though... I wont be leaving without some new pickles (if you know , you know what I'm talking about)! What are some of your favorite farmer's market finds these days?

Summer or Fall, I think a refreshing glass of iced tea is a great treat to enjoy all year round. Iced tea is one of those things that has a special place in my heart because it always brings up warm memories of my grandma. She always had a fresh brewed batch of iced tea waiting in her fridge any time my dad and I would stop by to visit. She was famous for it-- definitely the best you'll ever have! So today, I'm sharing Grammy Gen's Iced Tea recipe with you all ☺ Get the recipe below
Grammy Gen's Iced Tea:
Place 5 tea bags in a half gallon pitcher and fill it up half way with boiling water. Let it steep 5-10 minutes, then remove the tea bags. Add 1/2 cup of sugar and stir to mix. Add 1/4 to 1/2 cup of lemon juice, then 1 tray of ice cubes and mix. Add 6-8 sprigs of mint and pace in fridge to cool thoroughly. Enjoy!

Hi Friends, remember me? I sort of accidentally took a break this summer to relax and enjoy time with family and friends. Like me, I hope you got to chill out, eat lots of seafood and enjoy the summer sun. I must say, it's been really nice to step away, but I also can't wait to get back into gear cooking and photographing recipes. Now that the summer is unofficially over, I am back in the kitchen and have lots of new posts ready to share with all of you. Stay tuned!

Hollandaise sauce made right at home? You better believe it! It’s easier than you might think… all you need is a blender and a few simple ingredients and you can have a gourmet breakfast without even changing out of your pjs! I love making breakfast with my because- it’s not just smoothies, there are really so many options and fun ways to create something outside the box! Get the recipe below 👇🏻
Easy Bender Hollandaise:
Separate and reserve 2 egg yolks and add to a blender. Add 1 Tbsp fresh lemon juice and a pinch of cayenne pepper (or a few drops of Frank’s Red Hot), and blend in medium speed for about 20-30 seconds. Melt 1 stick of butter, then return the blender to medium speed and slowly drizzle in the butter until all has been added. Taste and adjust flavor with salt and pepper.

I've been seeing a lot of zucchini blossoms in my feed lately so I'm getting excited thinking about them coming back into season! I made these last year using recipe (below) and they were soo good. Served with lemon parmesan peppercorn sauce (made healthy-ish with greek yogurt... wish I wrote down the recipe 😑). Can't wait to see them again! What spring/summer vegetables are you most looking forward to?

Interested in a little homemade pasta action? Unfortunately I don’t own a pasta roller, so I made a really simple pappardelle that I was able to make with just a rolling pin and a little arm strength. It really turned out so wonderful— I cooked half and dried the rest for future use. The recipe is easy— just 2 cups of flour, 3 eggs (beaten) a healthy drizzle of EVOO and some salt. Knead it all together, wrap it up and let it chill in the fridge, then roll it out nice and thin. Slice into ribbons, then you can let it sit out overnight to air dry or cook it right away!

I usually don't eat breakfast, but I love starting Sunday's off with a good meal. This vegetable frittata is healthy and delicious, but better yet, you'll have plenty of leftovers to provide breakfast during the week. You can use whatever vegetables you have on hand, but I used fresh kale, cherry tomatoes, onion and zucchini. Just sauté the veggies in an oven-safe skillet over medium heat with a bit of olive oil, salt and pepper. Whisk together 6 eggs, 1/2 cup greek yogurt, then mix in ~1/4 cup fat free feta cheese. Add egg mixture to the skillet and cook until bottom is set. Then, transfer pan to the oven and broil until top is set and lightly golden. Enjoy!

A few weeks ago we took a spur of the moment weekend trip to Cape May and had the best time. One of my favorite parts was a farm to table dinner at the beautiful . It’d been so long since we’d been out to a nice dinner and it reminded me how much I love a pre fixe, especially when the menu is curated with locally grown ingredients. It’s stuff like this that have always inspired my love for food- when dinner is more than a meal, but becomes a cherished memory. Happy weekend friends!
