Cattle take the place of an important, absent, keystone species: the grazing herbivore. When managed the way we and our farmer-rancher partners do it, the impacts bring about a huge increase in biodiversity like birds, insects, fungi, and plant species that otherwise wouldn't find their niche.
Also, and this distinction critical, protein from plants is simply not the same as nutrient-dense animal products. Meat provides much more bioavailable forms of key nutrients and the proteins are complete rather than missing key amino acids.
Yes, by some measures plant proteins seem much more "efficient" on paper. But grain crops are pretty much NEVER grown as a functioning part of an ecosystem and almost ALWAYS as a monoculture with very little biodiversity. Cattle, when managed right, are literally a product of a healthy, diverse ecosystem that requires little to no additional energy intensive inputs.
As a teacher of mine once said "perennials always win". These grasses and broadleaf plants grow as a diverse, self-supporting system. No planting, no spraying, no fertilizer required. And along with all the other ecological services they provide, the cattle turn them into high-quality, delicious protein.
